  • 1 lb. spaghetti
  • 2 Tbsp. olive oil
  • 2 Tbsp. (or 1 fresh clove) garlic, minced
  • 1 small onion, chopped
  • 1 green pepper, chopped
  • jalapeno peppers, if desired
  • 16 oz. jar of tomatillo sauce
  • 1 Tbsp. cumin
  • 2 cans black beans, drained
  • salsa (or picante) sauce
  • Cheddar cheese, shredded
  • sour cream

Directions

    Prepare spaghetti as directed.

    While pasta is cooking, in a large skillet, saute garlic, onion, and green pepper in olive oil. Add tomatillo sauce, cumin, and black beans.

    Mix well and allow to simmer for 5-10 minutes.
