- 5 to 8 yellow squash
- 3 Tbsp. minced onion
- 6 Tbsp. butter
- 1 1/2 c. Cheddar cheese, grated
- 1/2 to 1 can Ro-Tel tomatoes and green chilies
- salt and pepper to taste
- Ritz cracker crumbs
Directions

1Peel squash and slice.

2Cook with minced onion until tender. Drain well and place in a casserole with 4 tablespoons of butter, cheese, tomatoes, salt and pepper.
