- 8 c. yellow squash, sliced 1/2 inch thick
- 1 Tbsp. pickling spice
- 2 c. chopped onion
- 1/4 c. chopped green pepper
- 1 large can pimento
- 1 c. apple cider vinegar
- 1 3/4 c. sugar
- 1/2 tsp. mustard seed
- 1/2 tsp. celery seed
Directions

1Wash and slice squash.

2Sprinkle with salt and set aside for 1 hour.

3Bring vinegar and sugar to a boil.

4Add squash, onion, green pepper and pimento; bring to a boil again.

5Pack in jars.

6Add mustard and celery seed to remaining juice in pan and boil.

7Pour into jars.

8Seal and process in hot water bath for 10 minutes.
