Ingredients

  • 8 c. yellow squash, sliced 1/2 inch thick
  • 1 Tbsp. pickling spice
  • 2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1 large can pimento
  • 1 c. apple cider vinegar
  • 1 3/4 c. sugar
  • 1/2 tsp. mustard seed
  • 1/2 tsp. celery seed

Directions

    Wash and slice squash.

    Sprinkle with salt and set aside for 1 hour.

    Bring vinegar and sugar to a boil.

    Add squash, onion, green pepper and pimento; bring to a boil again.

    Pack in jars.

    Add mustard and celery seed to remaining juice in pan and boil.

    Pour into jars.

    Seal and process in hot water bath for 10 minutes.
