Mexican-Style Prawns

Ingredients
- 24 prawns very large king
- 1 onion large, chopped
- 3 cloves garlic chopped
- 2 red chili peppers large
- 1/2 lemon
- 1 can chopped tomatoes
- 1 bunch coriander chopped
- olive oil
- black pepper
- salt
Directions

1Peel the prawns carefully, leaving the head and tail intact.

2Devein the prawn by removing the black intestinal tract.

3Open the chilies and remove the seeds; chop and set aside.

4Heat a drizzle of oil in a heavy based frying pan, add the onion and cook until soft.

5Add the garlic and chillies.

6Stir well and add the prawns. Squeeze the lemon juice over the prawns and stir again.

7Pour in the tomato. Season and leave to cook on low until the sauce thickens.

8Sprinkle with coriander and serve.

9May be served as a starter, or a main meal with rice or pasta.
