Ingredients
- 4 individual portions boneless, skinless salmon
- 2 eggs, well beaten
- 3/4 cup flour
- 1/4 cup vegetable oil
- 1 (15 oz) can tomato sauce
- 1/4 tsp fresh black pepper
- 1/2 tsp cajun spices
- 1/4 cup black olives, sliced
- 1/4 cup capers, drained and washed
Directions

1Dip salmon in egg wash, then roll in flour.

2In skillet, cook fish in oil for about 5 minutes on each side.

3Do not move around in skillet.

4In separate pan, mix remaining ingredients and warm, but do not bring to a boil.

5Spoon a small amount of sauce onto serving plate.

6Lay cooked salmon in sauce.

7Spoon additional sauce over top of fish.

8Serve and enjoy.
