Ingredients

  • 10 c. chopped squash
  • 4 c. chopped onions
  • 5 tsp. salt
  • 2 1/2 c. vinegar
  • 5 c. sugar
  • 1 Tbsp. cornstarch
  • 1 large jar red pimentos, chopped
  • 2 chopped peppers
  • 1/2 tsp. black pepper
  • 1 tsp. nutmeg
  • 1 Tbsp. turmeric

Directions

    Combine the squash, onions and salt together.

    Let stand overnight.

    Then drain.

    Add vinegar, sugar, cornstarch, pimentos, peppers, black pepper, nutmeg and turmeric.

    Simmer 30 to 40 minutes.

    (Do not boil.)

    Then seal in jars.
