- 3 to 4 potatoes
- 2 Tbsp. olive oil
- 1 sliced onion
- 1/2 can stewed tomatoes (canned tomatoes or fresh tomatoes)
- 1/2 tsp. basil
- 1/2 tsp. rosemary
Directions

1Cut potatoes in large pieces and coat with oil. Place on a 9 or 10-inch baking pan. Cover with sliced onion and tomatoes.

2Add seasonings. Cover with wax paper or plastic.

3Microwave on High for 17 to 20 minutes.
