  • 3 to 4 potatoes
  • 2 Tbsp. olive oil
  • 1 sliced onion
  • 1/2 can stewed tomatoes (canned tomatoes or fresh tomatoes)
  • 1/2 tsp. basil
  • 1/2 tsp. rosemary

Directions

    Cut potatoes in large pieces and coat with oil. Place on a 9 or 10-inch baking pan. Cover with sliced onion and tomatoes.

    Add seasonings. Cover with wax paper or plastic.

    Microwave on High for 17 to 20 minutes.
