Microwave Caramel Corn

- 3 qt. popcorn (already popped)
- 1 1/2 c. peanuts
- 1 c. packed brown sugar
- 1/2 c. light corn syrup
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1/2 c. butter
- coconut (optional)
Directions

1Combine brown sugar, butter, syrup and salt in 2-quart glass bowl.

2Microwave on High 3 or 4 minutes, stirring after each minute, until mixture comes to a boil.

3Microwave 3 minutes more. Place popcorn and peanuts (and coconut, if desired) in a large brown paper bag.

4Add baking soda to syrup mixture and stir well (it will foam!)

5Pour over the popcorn and peanuts.

6Close bag, shake well and microwave on High for 1 1/2 minutes. Shake well and microwave for 1 1/2 minutes more. Shake well and pour into a large roasting pan. Cool and stir to separate.
