- 1/4 c. butter or margarine
- 2 c. mochiko (mochi rice flour)
- 1 c. sugar
- 1 tsp. sugar
- 1 tsp. baking powder
- 1 3/4 c. milk
- 1/2 tsp. vanilla
- 2 Tbsp. kinako (roasted soy bean flour, optional)
- 1 Tbsp. sugar (optional)
Directions

1Microwave butter in microwave-safe dish for 45 seconds until melted.

2In a mixing bowl, combine mochiko, 1 cup sugar and baking powder.

3Gradually add milk, vanilla and melted butter while stirring.

4Mix thoroughly.

5Pour into baking dish.

6Cover with waxed paper.

7Microwave 9 to 12 minutes on High and rotate dish a quarter turn every 2 minutes.

8Cool and cut into squares.

9Toss with kinako and sugar mixture until coated (optional).
