Microwave Peach Jam

  • 4 c. peaches, pitted, peeled and finely chopped
  • 2 Tbsp. lemon juice
  • 1 box or 1 3/4 oz. powdered fruit pectin
  • 5 1/2 c. sugar

    Place peaches, lemon juice and pectin in 3-quart casserole. Stir well and cover.

    Microwave on High until mixture is at a full rolling boil (8 to 10 minutes).

    Stir.

    Add sugar to mixture.

    Stir well.

    Microwave on High, uncovered, 7 to 9 minutes (stirring after 4 minutes) until mixture reaches full rolling boil, then time for 1 more minute after boiling.

    Skim off foam and stir jam for about 5 minutes before ladling into prepared glasses.

    Seal.
