- 3/4 c. sugar
- 1/4 tsp. salt
- 1 egg, well beaten
- 2 c. cooked rice
- 2 1/2 Tbsp. cornstarch
- 2 1/2 c. milk
- 2 Tbsp. butter
- 1 tsp. vanilla
Directions

1In a 2-quart microwave dish, blend sugar, cornstarch and salt. Stir in milk; mix well.

2Microwave on High for 7 minutes, stirring every 3 minutes.

3Stir small amounts of hot pudding into well beaten egg, then return to hot pudding.

4Microwave 4 minutes; stir after 1 minute and continue to microwave until thick, then add butter and vanilla and stir in cooked rice.
