  • 2 tablespoons olive oil
  • 10 ounces baby carrots scrubbed
  • 7 ounces green beans trimmed
  • 5 ounces baby corn
  • 4 ounces snow peas trimmed
  • 3 cloves garlic crushed

Directions

    Heat the oil in a large skillet or wok on medium heat. Add the carrots; stir-fry for 5 mins.

    Increase the heat to high. Add the green beans, baby corn, snow peas and garlic. Stir-fry for 2-3 mins until just tender. Season with salt and freshly ground black pepper. Serve immediately.
