Microwave Vanilla Cream Pie

- 3/4 c. sugar
- 1/4 c. cornstarch
- 1/4 tsp. salt
- 2 1/2 c. milk
- 4 egg yolks
- 1 Tbsp. butter
- 1 1/2 tsp. vanilla
- 1 (9-inch) baked pie shell
- whipped cream or meringue
Directions

1In a 2-quart casserole, mix together sugar, cornstarch and salt.

2Gradually add milk, mixing well.

3Cook with microwave on High 4 to 6 minutes or until thick, stirring every minute.

4Beat egg yolks slightly.

5Gradually add some of the hot mixture to egg yolks, stirring constantly.

6Add combine egg mixture to hot mixture and mix well.

7Cook with microwave on High 1 1/2 to 2 1/2 minutes until thick, stirring every 30 seconds.

8Add butter and vanilla.

9Mix well.

10Pour hot filling into baked pie shell.

11Cool. Top with whipped cream or meringue.
