Ingredients
- 1/3 c. margarine
- 1 c. shredded cabbage
- 1 c. grated carrot
- 1 c. grated raw potato
- 1/4 c. finely chopped celery
- 1/4 c. minced onion
- 2 Tbsp. chopped parsley
- 4 egg yolks, well beaten
- 1/2 c. milk
- 1 c. cubed whole wheat bread
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 4 egg whites, stiffly beaten
Directions

1Melt margarine in saucepan.

2Add cabbage, potato, celery, carrot, onion and parsley.

3Cook over low heat 5 minutes.

4In bowl, combine egg yolks and milk; blend in bread cubes, salt and pepper.

5Gradually blend in vegetable mixture.

6Fold in stiffly beaten egg whites.

7Pour into well-greased 1 1/2-quart casserole. Bake at 350° for 45 minutes.
