Ingredients

  • 1/3 c. margarine
  • 1 c. shredded cabbage
  • 1 c. grated carrot
  • 1 c. grated raw potato
  • 1/4 c. finely chopped celery
  • 1/4 c. minced onion
  • 2 Tbsp. chopped parsley
  • 4 egg yolks, well beaten
  • 1/2 c. milk
  • 1 c. cubed whole wheat bread
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 4 egg whites, stiffly beaten

Directions

    Melt margarine in saucepan.

    Add cabbage, potato, celery, carrot, onion and parsley.

    Cook over low heat 5 minutes.

    In bowl, combine egg yolks and milk; blend in bread cubes, salt and pepper.

    Gradually blend in vegetable mixture.

    Fold in stiffly beaten egg whites.

    Pour into well-greased 1 1/2-quart casserole. Bake at 350° for 45 minutes.
