- 4 -6 cups tomato juice
- 1 cup yogurt
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 2 teaspoons curry powder
- salt, to taste
- fresh ground pepper, to taste
Directions

1Combine all ingredients in a bowl and stir with a whisk until thoroughly combined and smooth.

2Serve chilled, garnished with chopped mint or basil. (I plan to chill at least 2 hours - maybe overnight).
