  • 3 egg whites
  • 1 c. sugar
  • 1 tsp. vanilla
  • 21 Ritz crackers, rolled fine with rolling pin
  • 2/3 c. crushed pecans or walnuts
  • 8 oz. can crushed pineapple, drained
  • 3/4 c. confectioners sugar
  • 1 pt. heavy cream or 2 c. Cool Whip
  • 8 oz. cream cheese

Directions

    Beat whites until stiff, add sugar a little at a time.

    Add vanilla.

    Fold crackers and nuts into egg white mixture.

    Pour into 10-inch pie pan (preferably glass).

    Bake at 350° for 30 minutes.

    Let cool completely.
