Ingredients

  • 1 clove garlic, crushed
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon curry powder
  • 1/2 teaspoon chilli powder
  • 1 carrot, thinly sliced Target 2 lb For $3.00 thru 02/06
  • 1 stalk celery, sliced
  • 1 red capsicum, finely sliced
  • 2 cups broccoli florets
  • 1/2 cup coconut milk
  • 2 teaspoons VEGEMITE
  • 2 tablespoons fruit chutney

Directions

    Heat a frying pan or wok, add a little oil and stirfry onion, garlic, ginger and spices for 8-10 minutes until onion is soft.

    Add vegetables and stir fry 6 minutes or until tender.

    Add combined coconut milk, Vegemite* and fruit chutney and cook a further 2-3 minutes.

    Serve immediately as main meal accompaniment or with steamed rice.
