  • 1 large carton Cool Whip
  • 1 can Eagle Brand milk
  • 1 large pkg. frozen strawberries, drained
  • 1 c. chopped nuts
  • 1/2 c. lemon juice (add last)
  • 9-inch unbaked pie crust
  • 3 eggs
  • 1 c. dark corn syrup
  • 1/2 c. sugar
  • 1/4 c. melted margarine
  • 1 c. canned pumpkin
  • 1 tsp. vanilla
  • 1 c. pecan halves

    Preheat your oven to 350° and prepare pie crust.

    Then, with a hand beater or wire whisk, beat the eggs well.

    Beat in the next 5 ingredients until well blended.

    Now arrange the pecans in the bottom of the pie crust.

    Slowly pour the egg mixture over them. Bake for 1 hour, or until a knife inserted 1-inch from edge comes out clean.

    Let it cool, then serve it with good old whipped cream!
