  • 4 c. rye flour
  • 2 c. wheat flour
  • 1 c. riced potatoes, solidly packed
  • 1 cake yeast (1 oz.)
  • 1 Tbsp. salt
  • 1 pt. hot potato water
  • 1 tsp. caraway seed

Directions

    Pour potato water in mixing bowl.

    When lukewarm, add yeast dissolved in 1/4 cup of the lukewarm liquid.

    Stir in rest of ingredients; knead until smooth and elastic.

    Let rise in warm place until doubled.

    Form into loaves; place in pans.

    Let rise. When double its bulk, bake in a 375° oven for 1 hour.

    Brush top with water.
