  • 2 c. sugar
  • 1 1/2 c. oil
  • 4 eggs
  • 2 c. sifted flour
  • 2 tsp. cinnamon
  • 2 tsp. nutmeg
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 3 c. grated raw carrots
  • 1 c. chopped walnuts

Directions

    Mix and beat well sugar, oil and eggs.

    Add dry ingredients and mix well.

    Add carrots and nuts and mix well.

    Bake in greased and floured 8-inch pans (2 thick layers or 3 thinner layers) or a 13 x 9-inch pan for 30 minutes at 350°.

    (It only takes 3 to 4 good sized carrots to make 3 cups!)
