Minced Eggplant

Ingredients

  • 1 large eggplant
  • 1 medium sized onion, chopped
  • 2 Tbsp. butter or margarine
  • 2 eggs, well beaten
  • 1/2 can mushroom soup
  • 1 c. grated cheese
  • 1 small can pimentos
  • salt and pepper to taste
  • 1 c. bread crumbs

Directions

    Peel eggplant; cut in slices.

    Cook in boiling, salted water for 10 or 15 minutes or until tender.

    Drain and mash.

    Saute onion in butter until soft.

    Combine eggplant, onion, crumbs, soup, 3/4 cup cheese, pimentos and seasonings.

    Add well beaten eggs.

    Pour into greased baking dish.

    Top with other 1/4 cup of grated cheese.

    Bake in moderately hot oven for about 30 minutes at 375°.
