- 1 large eggplant
- 1 medium sized onion, chopped
- 2 Tbsp. butter or margarine
- 2 eggs, well beaten
- 1/2 can mushroom soup
- 1 c. grated cheese
- 1 small can pimentos
- salt and pepper to taste
- 1 c. bread crumbs
Directions

1Peel eggplant; cut in slices.

2Cook in boiling, salted water for 10 or 15 minutes or until tender.

3Drain and mash.

4Saute onion in butter until soft.

5Combine eggplant, onion, crumbs, soup, 3/4 cup cheese, pimentos and seasonings.

6Add well beaten eggs.

7Pour into greased baking dish.

8Top with other 1/4 cup of grated cheese.

9Bake in moderately hot oven for about 30 minutes at 375°.
