Ingredients
- 4 large Russet potatoes, boiled, peeled and cubed
- 8 pieces bacon, fried crisp and crumbled
- 4 Tbsp. butter
- 1/2 bell pepper, finely chopped
- minced garlic to taste
- salt and pepper to taste
- 12 eggs, slightly beaten
- 2 c. grated sharp Cheddar cheese
Directions

1Melt butter in skillet.

2Add potatoes and pepper and brown slightly.

3Add garlic, salt and pepper.

4Pour eggs over potatoes and cook until eggs form soft curds, stirring constantly.

5Mix in crumbled bacon.

6Sprinkle grated cheese over top.

7Place skillet in oven or under broiler until cheese is melted.

8Makes 8 servings.
