- 3/4 c. onion, chopped
- 2 cloves garlic, minced
- 3 Tbsp. olive oil
- 1 c. chickpeas or beans
- 1/4 c. celery, chopped
- 1 1/2 c. zucchini, diced
- 1 c. potatoes, diced
- 1 1/2 c. cabbage, coarsely chopped
- 1 can ripe tomatoes
- 8 c. boiling water
- 2 tsp. salt
- dash of pepper
- 1/2 tsp. basil
- 1 tsp. parsley
- 1 c. cooked, drained macaroni
Directions

1Saute onion and garlic in oil.

2Combine remaining ingredients, except macaroni.

3Cook until vegetables are tender, about 1 1/2 hours.

4Add macaroni.
