Ingredients

  • 3/4 c. onion, chopped
  • 2 cloves garlic, minced
  • 3 Tbsp. olive oil
  • 1 c. chickpeas or beans
  • 1/4 c. celery, chopped
  • 1 1/2 c. zucchini, diced
  • 1 c. potatoes, diced
  • 1 1/2 c. cabbage, coarsely chopped
  • 1 can ripe tomatoes
  • 8 c. boiling water
  • 2 tsp. salt
  • dash of pepper
  • 1/2 tsp. basil
  • 1 tsp. parsley
  • 1 c. cooked, drained macaroni

    Saute onion and garlic in oil.

    Combine remaining ingredients, except macaroni.

    Cook until vegetables are tender, about 1 1/2 hours.

    Add macaroni.
