Ingredients

  • 3/4 to 1 lb. ham, cubed
  • small onion, diced
  • 2 Tbsp. minced parsley
  • 1/8 tsp. garlic powder
  • 1 c. shredded cabbage
  • 1/2 c. diced celery
  • salt and pepper to taste
  • 9 c. water
  • 1 c. diced potatoes
  • 1/2 c. diced carrots
  • 1 Tbsp. oil
  • 1 c. dried lima beans, soaked overnight
  • 8 beef bouillon cubes
  • 1 c. fresh or canned tomatoes
  • 1/2 c. macaroni

Directions

    Saute celery, garlic powder and onion lightly in oil.

    Add everything but the macaroni and simmer for 1 1/2 hours.

    Add the macaroni and simmer 30 more minutes.

    If you don't get a chance to soak the lima beans overnight, put them in a small pot with 3 cups of water (subtract from the 9 cups that you need).

    Bring to boil; cover and remove from heat.

    Let sit for an hour, then pour beans and water into other soup ingredients before starting to cook.
