  • 1 1/2 qt. beef broth
  • 1 1/2 c. home cooked or canned chickpeas
  • 2/3 c. diced celery
  • 2/3 c. diced carrots
  • 1/2 c. diced onion
  • 16 oz. can tomatoes, undrained
  • 8 oz. can green lima beans, undrained
  • 1/3 c. elbow macaroni
  • oregano, salt and pepper to taste

Directions

    Bring to a boil the peas, celery, carrots, onion and tomatoes. Simmer about 45 minutes. Add lima beans, macaroni and seasoning. Cook until macaroni is tender. Serve with freshly grated Parmesan cheese.
