Ingredients

  • 1/2 Cup Olive Oil
  • 20g Butter
  • 3 Onions, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 4 slices bacon, chopped
  • 2 carrots, roughly chopped
  • 1 celery stalk, thinly sliced
  • 1.5 litres chicken stock
  • Chunk of parmesan, roughly chopped
  • 2 bay leaves
  • Handful of Macaroni (optional)
  • Bunch of kale, roughly chopped
  • 1 tin mixed beans
  • 1 tin choped tomatoes
  • Courgette (optional)

Directions

    Add oil and butter to a large pot and heat until melted

    Add onion and cook until soft
  3. 3
    Add garlic and bacon. Cook until bacon is crispy (or to taste) - about 8 mins

    Add carrot and celery. Cook until soft (about 5 mins)

    Add stock, tomato, beans, bay leaves and parmesan chunks

    Cover, reduce heat and cook for as long as you can

    Just before eating, add kale and pasta and extra veg if using. Cook for approx 10 mins

    Serve with toast and extra cheese
