Ingredients

  • 1 12 quarts chicken broth, divided
  • 1 (15 ounce) canrinsed and drained garbanzo beans
  • 2 cups coarsely shredded cabbage
  • 2 cups chopped tomatoes
  • 1 cup cut green beans
  • 6 small new potatoes, quartered
  • 34 cup chopped onion
  • 34 cup thinly sliced leek
  • 34 cup sliced carrot
  • 1 teaspoon dried Italian seasoning
  • 34 cup broccoli floret
  • 34 cup peas
  • 4 ounces macaroni, cooked
  • 12 cup finely chopped parsley
  • salt and pepper
  • grated parmesan cheese (to garnish)

Directions

    Combine all ingredients except broccoli, peas, macaroni, parsley, salt, pepper and cheese in slow cooker; cover and cook on low 6-8 hours, adding broccoli peas and macaroni during last 30 minutes.

    Stir in parsley; season to taste with salt and pepper.

    Serve topped with cheese.
