Minestrone Soup

  • 2 large carrots
  • 2 stalks celery
  • clove garlic
  • 2 beef bouillon cubes
  • 1 (8 oz.) can tomatoes, chopped
  • 1/2 small can tomato paste
  • 1 can red kidney beans, drained and rinsed
  • 1/3 c. elbow macaroni

Directions

    Chop carrots, celery and garlic.

    Bring to a boil with 2 cups water and bouillon cubes.

    Simmer 10 to 15 minutes.

    Add chopped tomatoes and paste, along with 4 cups water and kidney beans. Simmer 20 minutes.

    Add elbow macaroni.

    Cook until tender. Serve with grated cheese.
