  • 3 tablespoons butter
  • 4 granny smith apples peeled, cored, finely chopped
  • 3 tablespoons maple syrup
  • 1 tablespoon sugar
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup raisins
  • 1/3 cup slivered almonds toasted
  • 2 sheets frozen puff pastry thawed
  • 1 large egg lightly beaten
  • brown sugar to sprinkle, optional

    Melt the butter in a large pan on medium heat. Add the apple and cook, stirring occasionally, for 4-5 mins until golden. Stir in the maple syrup, sugar and cinnamon. Cook, stirring, for 4-5 mins until the liquid thickens.

    Transfer the mixture to a bowl. Stir in the raisins and almonds, then set aside for 15 mins to cool, then chill until the mixture is cold.

    Preheat oven to 400°F. Line a baking tray with parchment paper. Cut each pastry sheet into 12 even-sized squares.

    Spoon 2 teaspoons of the apple mixture onto one half of each pastry square. Brush the edges with egg, then fold the pastry over the filling to form a triangle, pressing the edges firmly with a fork to seal. Brush with the remaining egg. Sprinkle with a little brown sugar, if you like.

    Bake for 15-20 mins until golden. Allow to cool on trays, then serve.
