- 6 Large Eggs
- 1/2 cups Milk
- 1/4 teaspoons Salt
- 1 pinch Black Pepper
- 1/3 cups Diced Tomatoes
- 1/4 cups Shredded Mozzarella Cheese
- 2 Tablespoons Fresh Basil, Chopped
- 2 ounces, weight Fresh Mozzarella, Cut Into 24 Pieces
Directions

1Preheat oven to 375 F. Spray a 24 cup mini muffin pan with non-stick cooking spray and set aside.

2In a large bowl whisk together eggs, milk, salt and pepper. Stir in diced tomatoes, shredded mozzarella and basil.

3Place a piece of fresh mozzarella into each muffin well and pour egg mixture into each well, filling to the top.

4Bake for 10-12 minutes until eggs are set and puffed.

5Carefully remove from muffin cups and serve warm.
