Mini Cheesecake Bites

Ingredients
- 200 grams Cream cheese
- 150 ml Heavy cream
- 2 Eggs
- 60 grams Sugar
- 2 tbsp Cake flour
Directions

1Preheat the oven to 180C.

2Bring the cream cheese to room temperature.

3Put cupcake liners (or aluminum cups) into the cupcake tin.

4Put all ingredients into a food processor.

5Mix until there is no cheese.

6It's better to cut the cheese into small pieces.

7Pour the mixture into the liners, to about 70% full.

8Bake for 35-40 minutes at 180C.

9Check with a bamboo skewer, if it comes out clean, it's done.

10Ramekin version: If you're using slightly larger ramekins, you can make 6-8 cheesecakes (about 9 cm diameter).
