- 1/2 c. graham cracker crumbs
- 2 Tbsp. melted oleo
- 2 Tbsp. preserves (strawberry or raspberry)
- 1 (8 oz.) cream cheese, softened
- 1/2 tsp. vanilla
- 1 egg
- 1/4 c. sugar
Directions

1Combine graham cracker crumbs and butter, stirring well. Line 1 3/4-inch muffin pans with miniature paper liners.

2Spoon 1 teaspoon of crumb mixture into each liner; gently press into bottom.

3Beat cream cheese at high speed of electric mixer until light and fluffy.

4Gradually add sugar and mix well.

5Add eggs and vanilla, beating well.

6Spoon mixture into liners.

7Bake at 350° for 10 minutes.

8Yields 2 dozen.
