Mini Chocolate Eclairs

- Filling
- 1 (3 ounce) package vanilla pudding mix (not instant)
- 2 cups milk
- Eclair
- 1 cup flour
- 2 medium eggs
- 1/2 cup butter
- 1 cup water
- 1/8 teaspoon salt
- Frosting
- 12 ounces chocolate frosting (I prefer Betty Crocker's whipped)
Directions

1Prepare pudding according to directions on box and let cool for at least 1 hour.

2Preheat oven to 400 degrees.

3Combine butter,water and salt in a sauce pan over medium heat until butter is melted and it comes to a boil.

4Reduce heat to low.

5Stir in flour very fast and well until mixture forms into a ball.

6Put the mixture into a bowl and let cool for 5-7 minutes.

7Add eggs in 1 at a time and beat well.

8Cover a large baking sheet with parchment paper.

9Drop mixture onto baking sheet into 12 mounds 5 inches apart.

10Using a spoon, spread out each mound until it becomes a 4 x1/2 inch rectangle rounding the edges of the side to make it oval.

11Bake for 35 minutes or very lightly golden.

12Then cut a 1 inch slit along side of each eclair.

13Reduce oven heat to 375 degrees and return them into the oven for another 10 minutes.

14Put on a wire rack to cool.

15Cut each eclair into half.

16Spread 1 tbsp of filling on the bottom part of the eclair.

17Frost tops with frosting.
