Mini Lamb Pizzas

Ingredients

  • 2 teaspoons olive oil
  • 1 onion thinly sliced
  • 2 cloves garlic crushed
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 pound ground lamb lean
  • 1/4 cup raisins
  • 1 cup plain greek yogurt
  • 4 whole wheat pita breads
  • fresh mint leaves for garnish
  • lemon wedges to serve

Directions

    Heat oil in a large saucepan on medium heat. Cook onion, stirring occasionally, for 5 mins, or until soft. Add garlic, cumin and coriander and cook, stirring, for 1 min, until fragrant.

    Add ground lamb and cook, stirring with a wooden spoon to break up any lumps, for 5-6 mins, until browned. Stir in raisins.

    Spread yogurt over pitas. Top with lamb mixture. Sprinkle with mint leaves and serve with lemon wedges to squeeze over.
