- 2 refrigerated pie crusts
- 1/2 cup chopped ham
- 3 slices bacon
- 1/2 cup cheddar cheese grated
- 1/4 cup roasted red peppers jarred, chopped
- 2 green onions sliced
- 1/2 cup milk
- 2 eggs
- salad to serve
Directions

1Preheat the oven to 400°F. Lightly grease a 12-cup muffin pan.

2Cut twelve 3-inch rounds from the pie crusts. Press into muffin cups. Prick lightly with a fork. Bake for 5 mins. Remove from the oven. Reduce oven temperature to 350°F.

3Divide bacon, cheese, peppers and onions among the muffin cups.

4Whisk the milk and eggs in a medium bowl. Season to taste. Pour evenly into the muffin cups.

5Bake for 15-20 mins, until golden and firm. Serve with salad.
