- 2 (9-inch) pie crusts
- 2 Tbsp. margarine
- 1 c. chopped onion
- 1 1/2 c. grated Swiss cheese
- 4 eggs, slightly beaten
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 1/4 tsp. pepper
- 2 c. half and half
- 1/2 lb. bacon, bacon bits or stripples
Directions

1Line cupcake tins with pie crust.

2Saute onion in frypan with margarine.

3Remove from pan and cool.

4Sprinkle a little of bacon, cheese and onion in each cupcake tin.

5Beat eggs slightly.

6Add half and half, salt, pepper and nutmeg.

7Pour this into cups over bacon/cheese mixture.
