- 2 doz. vanilla wafers
- 2 (8 oz.) pkg. cream cheese
- 1 Tbsp. fresh lemon juice
- 1 (1 lb. 5 oz.) can cherry pie filling
- 3/4 c. sugar
- 2 eggs
- 1 tsp. vanilla
Directions

1Soften cream cheese in a bowl.

2In 2 dozen muffin tins, place paper liners.

3In the bottom of each liner, place a vanilla wafer. Gradually add sugar to softened cream cheese.

4Mix in juice and vanilla.

5Beat in eggs, one at a time, until light and fluffy. Spoon into liner.

6Bake in a 375° oven just until set, about 15 minutes.

7Remove cheese cake from muffin tins.

8Do not remove liners.

9Top each cheesecake with about 1 tablespoon pie filling. Refrigerate or freeze until ready to serve.
