Miniature Fruit Cake

- 1 lb. shelled pecans
- 1 lb. pitted dates
- 3/4 lb. candied cherries
- 1 lb. candied pineapple
- 3/4 c. flour
- 3/4 c. sugar
- 1/2 tsp. baking soda or powder
- 1/2 tsp. salt
- 3 eggs
- 1 stick butter, melted
Directions

1Chop pecans, dates, cherries and pineapple.

2Combine first four ingredients in large mixing bowl.

3Sift flour, sugar, baking soda (or baking powder) and salt together.

4Add to chopped nuts and fruits and mix well, using hands.

5Beat eggs until foamy; add to mixture and blend well.

6Pour melted butter over mixture and mix well.

7Pack mixture into small paper baking cups placed in muffin tins.

8Fill cups full.

9Bake at 300° about 40 minutes.
