Miniature Fruit Cakes

Ingredients

  • 4 oz. red candied cherries, chopped fine
  • 4 oz. green candied cherries, chopped fine
  • 4 oz. green candied pineapple, chopped fine
  • 4 oz. red candied pineapple, chopped fine
  • 7 oz. bag Baker's coconut
  • 2 c. pecans, chopped
  • 1 tsp. vanilla
  • 1 can Eagle Brand sweetened condensed milk

Directions

    Mix all ingredients well.

    Use food processor to chop fruits and nuts.

    Use small cupcake pan.

    Spray well with Baker's Joy. Bake at 350° for 15 to 20 minutes.

    Turn onto wax paper when removed from oven.

    Makes approximately 40 small cakes.
