Ingredients
- 1 cup sugar
- 1/4 cup butter room temperature
- 2 large eggs
- 1 1/2 cups flour, all-purpose
- 3 tablespoons baking powder
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1/2 teaspoon nutmeg ground
- 2 cups coconut, shredded (desiccated)
- 6 ounces chocolate (semi-sweet) mint-flavored
Directions

1Preheat oven to 400F (200C).

2In bowl, combine sugar and butter; blend well.

3Beat in 2 eggs, one at a time, beating well after each addition.

4Sift together and blend in gradually the flour, baking powder, cinnamon, salt and nutmeg.

5Add coconut and mint chocolate morsels.

6Mix well.

7Drop by rounded teaspoonfuls on greased cookie sheets.

8Bake in preheated oven 8 to 10 minutes.

9Cool on racks.

10Store in airtight container.
