Ingredients

  • 1 cup sugar
  • 1/4 cup butter room temperature
  • 2 large eggs
  • 1 1/2 cups flour, all-purpose
  • 3 tablespoons baking powder
  • 1 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1/2 teaspoon nutmeg ground
  • 2 cups coconut, shredded (desiccated)
  • 6 ounces chocolate (semi-sweet) mint-flavored

Directions

    Preheat oven to 400F (200C).

    In bowl, combine sugar and butter; blend well.

    Beat in 2 eggs, one at a time, beating well after each addition.

    Sift together and blend in gradually the flour, baking powder, cinnamon, salt and nutmeg.

    Add coconut and mint chocolate morsels.

    Mix well.

    Drop by rounded teaspoonfuls on greased cookie sheets.

    Bake in preheated oven 8 to 10 minutes.

    Cool on racks.

    Store in airtight container.
