Mint Ham With Halloumi

- 3 tablespoons olive oil
- 1 pound ham steaks smoked, cut into strips
- 1/2 pound halloumi cheese cut into strips
- 1 bunch spring onions halved
- 6 ounces cherry tomatoes
- 2 oranges zested and juiced
- 1 tablespoon honey
- 1 tablespoon dijon mustard
- 1 handful fresh mint leaves
- rice or mashed potatoes, to serve, optional
Directions

1Heat oil in a large frying pan. Add smoked ham and saute, stirring occasionally, for 5 mins. Add halloumi cheese and cook for another 3 mins, until golden brown. Add spring onions, cherry tomatoes, orange zest, orange juice, honey and Dijon mustard. Season. Bring to a boil then reduce heat and simmer, uncovered, for 2 mins, or until sauce is slightly thickened. Fold in mint leaves.

2Serve immediately with rice or mashed potatoes, if desired.
