Ingredients
- 1 1/2 c. firmly packed fresh mint leaves and stems
- 2 1/4 c. water
- 2 Tbsp. fresh lemon juice
- green food coloring
- 3 1/2 c. sugar
- 1/2 bottle liquid pectin
Directions

1Wash mint leaves and stems and put in a large saucepan; crush with a masher or drinking glass.

2Add the water and bring quickly to a boil.

3Remove from heat; cover and let stand for 10 minutes. Strain and measure 1 2/3 cups into large saucepan.

4Add lemon juice and a few drops of food coloring.

5Stir in sugar; put over high heat and bring to boil, stirring constantly.

6At once, stir in pectin, then bring to a full rolling boil and boil hard for 1 minute, stirring constantly.

7Remove from heat; skim off foam with metal spoon and pour in hot sterilized jars.

8Seal.

9Makes about four 1/2 pint jars.
