- 1/2 cups Sugar
- 1/2 cups Water
- 8 whole Large Fresh Mint Leaves
Directions

1In a small pot, combine the sugar and the water. Add the mint leaves. Bring to a simmer, gently swirling the pot to cover the mint leaves. Simmer for about 1-2 minutes, or until the sugar is dissolved. Let cool just enough to get it into a blender.

2VERY carefully puree the mixture on high until the mint leaves release all of their juice into the simple syrup. Pour the mint simple syrup through a small strainer and into a jar or heat proof bowl. Discard the mint solids.

3Refrigerate until ready to use. This should last a few weeks in an airtight container in the fridge.
