Mint Syrup

- 1 cup sugar
- 1 cup water
- 1/2 cup fresh mint leaves, coarsely chopped
Directions

1In a small saucepan, bring the sugar and water to a boil over high heat.

2Reduce the heat to medium and let it boil for 3 to 4 minutes.

3Remove the pan from the heat and stir in the mint.

4When the syrup has cooled, transfer it to a container, cover, and place in the refrigerator.

5Allow the mixture to steep for at least 4 hours, but preferably overnight.

6Before serving, strain the mixture and discard the mint.

7Variations:

8For basil syrup, substitute 1/2 cup of fresh basil leaves for the mint.

9For lavender syrup, use 1 tablespoon of dried lavender.

10Prepare the syrup as above.
