- 1 (3 oz.) pkg. Jell-O lime or lemon gelatin
- pinch of salt
- 3/4 c. boiling water
- 1 (1 lb. 4 1/2 oz.) can crushed pineapple or pineapple tidbits
- 6 drops mint extract
- 1/2 Tbsp. vinegar
Directions

1Dissolve Jell-O gelatin and salt in boiling water.

2Stir in remaining ingredients, saving can to use as mold.

3Chill until slightly thickened.

4Pour into the can and one individual mold or a serving bowl.

5Chill until firm.

6Unmold.

7(To unmold from can, puncture bottom before dipping in warm water.)

8Makes 3 1/4 cups, 6 side salads or 10 relish servings.
