- 4 medium ripe Roma tomatoes
- 1/2 cup plain yogurt
- 1/2 cup fresh mint leaves, snipped
- Pinch salt to taste
- 1/2 teaspoon black pepper to taste
Directions

1Cut tomatoes into bite-size pieces.

2Combine in a small bowl the yogurt and mint, salt and pepper.

3Toss the tomatoes gently into the yogurt mixture.

4Cover and chill until ready to serve, season again if desired.
