  • 1 pastry dough round sheet of puff
  • 1 3/4 cups semi-hard cheeses or mixed hard, fontina, asiago, montasio
  • 3 1/2 ounces mortadella one thick slice
  • 2 eggs
  • 7/8 cup heavy cream
  • 1/2 cup milk
  • 1 cup grated Parmesan cheese
  • salt and ground black pepper as needed

Directions

    Preheat the oven to 190C.

    Line a pie plate with wax paper and add the puff pastry crust.

    Cut the cheeses and mortadella into small pieces and combine them in a bowl.

    Spread them over the pie crust.

    Beat the eggs, the heavy cream, the milk, the grated cheese, the salt and the pepper in a bowl and pour over the cheese and mortadella pieces in the pie crust.

    Bake for approximately 25 minutes, turn the broiler on during the last 5 minutes.

    Remove the quiche from the oven and serve warm.
