- any fresh vegetables (i.e. summer squash, zucchini, red, yellow or green pepper, red or yellow onions, green beans, etc.)
- salt and fresh ground pepper to taste
- 1 Tbsp. Italian seasoning
- 1 c. shredded Mozzarella cheese
- 1 can Durkee onion rings
Directions

1Wash vegetables.

2Cut squash into 1-inch slices.

3Cut onions and pepper into large slices.

4If you use tomatoes, peel first. All vegetables should be in large slices to stay firm.

5Pick a glass baking dish large enough to hold the amount of vegetables for the people you want to serve.

6Toss vegetables with remaining ingredients, except onion rings.
