- 3 small yellow squash, sliced
- 3 small zucchini, sliced
- 1 small onion, chopped
- 1 clove garlic, minced
- 2 Tbsp. butter
- 1 fresh tomato, chopped
- 1/2 c. Parmesan cheese
- 1/2 tsp. dried basil
Directions

1Saute squashes, onion and garlic in butter, covered, until just tender, about 7 minutes.

2Stir in tomato; sprinkle with cheese and basil.

3Re-cover and continue cooking a couple of minutes until cheese melts.
