  • 5 teaspoons Country Crock(R) Spread
  • 1-1/2 cups sliced carrots
  • 1 large red or yellow bell pepper, chopped
  • 2 cups broccoli florets
  • 1 small onion, finely chopped
  • 2 teaspoons chopped fresh parsley
  • 1/8 teaspoon ground black pepper

    Melt Country Crock(R) Spread in 12-inch nonstick skillet over medium-high heat and cook carrots, red pepper, broccoli and onion, stirring occasionally, until vegetables are crisp-tender, about 6 minutes. Stir in parsley and black pepper.

    Bake until chicken is thoroughly cooked, about 20 minutes. Sprinkle with cilantro and serve with lime wedges.
